Finding true comfort at Consuelo by Chef Vince Garcia

CLARK FREEPORT — On a gloomy, rainy afternoon, the warmth inside a century-old barn house offered a welcome contrast to the gray skies outside.

Inside Consuelo, diners gathered over Filipino and Kapampangan dishes, filling the room with conversation and the familiar aromas of heirloom cooking. It was a fitting setting to meet Chef Vince Garcia, the restaurant’s owner and driving force.

Just in time for lunch, Garcia joined the table not as a restaurateur checking on operations, but as a host taking a break, sharing a meal, and telling the story behind Consuelo.

He spoke openly about the highs and lows of his journey in the food business, the challenges of building restaurants and the passion that has kept him moving forward.

“From the day I started, I never stopped,” Garcia said.

Preserving food heritage

Consuelo opened in Clark Freeport on Nov. 6, 2025. A year after, the Filipino-Kapampangan dining destination has established itself as a place where diners can experience traditional dishes rooted in heritage and family cooking.

For Garcia, the concept is closely connected to childhood memories and the rich food traditions of Kapampangan families.

He draws inspiration from food traditions that reflect the depth and richness of Kapampangan cuisine.

At Consuelo, heritage recipes deserve to be preserved not only through memory, but through the actual process of cooking and serving them.

 

Giving an old barn house new life

Consuelo’s story is also found in its walls.

The restaurant occupies a more than 100-year-old barn house that has been repurposed as a dining space while retaining its original exterior.

The old structure now serves a new purpose: bringing people together over food, with that same spirit reflected in everything from the interiors and ornaments to the smallest details on the plates and utensils, and in the warm hospitality of its staff.

For Garcia, the restaurant is also deeply personal.

The name Consuelo, which means comfort, reflects his vision of creating a place where Filipino food can be enjoyed in a warm and welcoming setting. The restaurant is dedicated to his wife, Sheena.

For him, food is comfort and Consuelo is a place where that idea comes to life.

Heirloom dishes, straightforward cooking

Consuelo features 25 dishes, with a menu designed to showcase Filipino and Kapampangan flavors without unnecessary complication.

Among its offerings are Pititchan Ternu King Achara, Suwam Mais, Sisig Matua, Pindang Damulag, Kalderetang Baka, Asadung Matua, and Kare-Kareng Tripas Samut Iking Baka.

The menu also includes Fritong Hitu, Buru, Apalya, Balasenas and Okra, Singleng Nasing Begukan with Tidtad Bawang.

Traditional drinks and desserts complete the meal, including Sago’t Gulaman, Kalame Ubi, and Tsuklating Batirol.

The approach is simple: respect the ingredients, follow the traditional process and allow the food to speak for itself. The restaurateur describes this connection to familiar food as “keragulan,” referring to something that has been part of one’s upbringing.

A growing restaurant journey

Garcia’s work as a restaurateur has expanded beyond Consuelo. He now operates seven stores under four brands, offering a variety of culinary concepts.

But despite the growth, his approach remains anchored in persistence and passion. His journey, he said, has never stopped since he began.

That determination is reflected in Consuelo …a restaurant that brings together food, family, history and celebration under one roof.

For Garcia, preserving Kapampangan cuisine does not mean keeping it in the past. It means allowing the next generation to taste it.
