
A fresh dining concept is making its mark with the soft launch of Colanzo Brunch and Bistro, a restaurant inspired by the Italian words for brunch and driven by a passion for globally influenced cuisine.




Led by professional chef and owner Ernest Canlas, Colanzo introduces a thoughtfully curated menu that blends international flavors with personal culinary stories. At the heart of its offerings is a standout Singaporean cereal dish—described by the chef as both nostalgic and innovative.
“It’s something I grew up with,” the chef shared, noting that the dish has yet to gain mainstream presence in the Philippines. “We wanted to bring that flavor here and present it in a way that’s both familiar and new.”

Colanzo’s concept goes beyond just food. Designed as an outdoor dining space rather than a traditional mall-based restaurant, it aims to provide a more relaxed and accessible atmosphere.
The decision to move away from enclosed, high-traffic commercial spaces was intentional.
“We wanted something less congested, more open, and aligned with how people enjoy meals today,” the team explained.

Open from 11 AM to 9 PM on weekdays and starting earlier at 10 AM on weekends, Colanzo caters to both brunch enthusiasts and casual diners. Its menu reflects a fusion approach—taking well-loved dishes and adding subtle twists to create something distinctive.

Affordability is also central to the restaurant’s philosophy. While maintaining quality and creativity, Colanzo strives to keep prices approachable.



“We want guests to have a great experience without feeling like they have to overspend,” the chef emphasized.


As it begins its soft launch phase, Colanzo positions itself as a promising new player in the local dining scene—one that values flavor, comfort, and accessibility, all served with a personal touch.
