Pampanga finally made it to the Michelin Guide — and it was worth the wait

Last year, the Michelin Guide came to the Philippines and somehow “forgot” to stop in Pampanga, known as the country’s (but not official) culinary capital.

As expected, people were not happy.

It’s a little different this year, though.

At the recent ceremony at the Manila Marriott, four Pampanga restaurants made it to the MICHELIN Guide 2027 list. And honestly — it was worth the wait.

Here are the four:

Apag Marangle, Guagua
Bib Gourmand

This restaurant has 70+ dishes, all Kapampangan and all made with ingredients from nearby and sauce made in-house.

This is where you bring your whole family, order way too much, and stay for 3 hours. If you want to understand why Pampanga is called the culinary capital, start here. Bib Gourmand means: really good food, price is still reasonable. Sulit.

Tito Boy, Clark
Bib Gourmand + Best Service Award

You know this place if you’ve ever had a birthday, anniversary, or business lunch in Clark. Chef Bong Sagmit does classy, comforting food that never misses.

And their manager, Clyde Joshua Zafra, just won the MICHELIN Service Award for the entire Philippines. That kind of service where they remember your name and your steak’s doneness without you saying anything. Deserved.

SOUQ, City of San Fernando
Michelin Selected

Lazatin Boulevard in the City of San Fernando is packed with restaurants, but SOUQ stands out. Chill, a little smoky, a little Middle Eastern, but very Kapampangan.

Michelin highlighted their lechon paksiw. Not your leftover paksiw — this one tastes like it went on vacation and came back better. Good for barkada dinners.

Mila’s Tokwa’t Baboy, Angeles City
Michelin Selected

No frills. No fancy plating. Just the tokwa’t baboy that Angeles has lined up for for decades.

Crispy tokwa, soft baboy, perfect toyo-suka-sili mix. Proof that you don’t need white tablecloths to make it to Michelin. You just need to do one dish really, really well for 30 years.

So from zero last year to four this year, plus a national service award? Not bad.

Michelin finally went to Pampanga.

And Pampanga said, “We’ve been waiting.”
